Birria Preparation

    Prepare the Birria Beef

    In a pot, soak guajillo and ancho chiles in hot water for 15 minutes. Blend with garlic, onion, cumin, oregano, and 1 cup of beef broth until smooth. In a slow cooker, combine beef chuck, blended sauce, remaining beef broth, and bay leaves. Cook on low for 8 hours until tender. Shred beef and set aside.

    Cook the Burger Patty

    Form ground beef into 4 equal patties and smash them on a hot grill or skillet. Season with salt and pepper. Cook for about 3-4 minutes on each side until desired doneness.

    Assemble the Burger

    On the bottom half of each bun, layer one smashed patty, a slice of aged white cheddar, a tostada, and a generous portion of shredded birria beef. Top with white queso, cilantro, diced onions, and sliced avocado. Finish with the top half of the burger bun.

    Serve immediately with extra birria broth for dipping if desired.
