Our taco feature of the month is a fan-favourite. Your choice of tortilla dipped in consommé and filled with Birria beef, mozzarella, onion, cilantro, and feta. Served with consommé and lime wedges. ⁠⁠Available for $4.50 tacos every Tuesday in February from 3pm-close!⁠

    Prepare the Birria

    In a large pot, add the beef chuck roast, beef broth, guajillo peppers, ancho peppers, diced onion, minced garlic, cumin, oregano, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 3 hours or until the beef is tender.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine with the broth.

    Prepare the Tortillas

    In a separate pan, heat a little oil over medium heat. Dip each corn tortilla into the consommé, then place it in the pan to warm and slightly crisp.

    Assemble the Tacos

    On each tortilla, add a generous portion of the shredded beef, followed by mozzarella cheese, chopped cilantro, and crumbled feta cheese.

    Serve

    Serve the tacos hot, accompanied by a small bowl of consommé and lime wedges on the side.
