Fries Preparation

    Cook the Fries

    Preheat the oil in a deep fryer or large pot to 350°F (175°C). Fry the frozen French fries in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

    Prepare the Birria

    Soak the dried guajillo and ancho chilies in hot water for 15 minutes until softened. In a blender, combine the softened chilies, garlic, onion, cumin, oregano, salt, and black pepper. Blend until smooth.

    Cook the Beef

    In a large pot, brown the beef chuck roast on all sides. Add the chili mixture, beef broth, and bay leaves. Bring to a boil, then reduce heat to low and simmer for 2-3 hours until the beef is tender and easily shredded.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot and allow it to soak in the consommé for added flavor.

Assembly

    Assemble the Poutine

    On a serving plate, layer the crispy fries, followed by the shredded birria beef and its consommé. Top with cheese curds and shredded mozzarella cheese. Garnish with fresh cilantro and serve hot.
