Cake and Toppings
Method
Preparation
- 1
Bake the Cake
Preheat your oven to 350°F (175°C). In a large bowl, combine the flour, sugar, baking powder, and salt. Add the butter and mix until crumbly. Stir in the milk and vanilla extract until just combined. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
- 2
Prepare the Strawberries
While the cake cools, wash and slice the fresh strawberries. If desired, sprinkle a little sugar over the strawberries to enhance their sweetness and let them sit for about 10 minutes.
- 3
Whip the Cream
In a medium bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue to whip until stiff peaks form.
- 4
Assemble the Shortcake
Once the cake is cooled, slice it horizontally into two layers. Place one layer on a serving plate and spread a layer of whipped cream on top, followed by half of the sliced strawberries. Place the second layer of cake on top, and repeat the process with whipped cream and the remaining strawberries. Finish with a dollop of whipped cream on top and garnish with a few whole strawberries, if desired.
