Prepare the Shrimp

In a large pot, bring salted water to a boil. Add shrimp and cook for 2-3 minutes until pink and opaque. Drain and set aside to cool.

Make the Pickling Liquid

In a bowl, whisk together olive oil, apple cider vinegar, minced garlic, sliced red onion, chopped dill, black peppercorns, bay leaves, and salt until well combined.

Combine Ingredients

In a large mixing bowl, combine the cooled shrimp with the pickling liquid. Mix well to ensure the shrimp are fully coated.

Marinate

Cover the bowl and refrigerate for at least 4 hours, or overnight for best flavor.

To serve, place pickled shrimp on a platter with butterbeans and saltines on the side. Enjoy!
