Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized fries, about 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch and then pat them dry with a paper towel.

    Heat the Beef Tallow

    In a large heavy-bottomed pot or deep fryer, heat the beef tallow over medium heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries to the hot beef tallow in batches, making sure not to overcrowd the pot. Fry until they are golden brown and crispy, about 5-7 minutes per batch.

    Drain and Season

    Use a slotted spoon to remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess fat. Season with salt and black pepper immediately.
