Cocktail

Method

Prepare rim and glass

  1. 1

Combine 0.5 tsp fine sea salt and 0.25 tsp ground Sichuan peppercorns on a small plate and mix evenly.

  2. 2

Rub the rim of a chilled rocks or coupe glass with a lime wheel, then dip the rim into the salt–Sichuan mixture to coat. Set glass aside.

Make basil syrup (if you don't have it)

  1. 3

Simple basil syrup (makes ~6 oz)

In a small saucepan combine 1 cup water and 1 cup granulated sugar. Bring to a gentle simmer, stirring until sugar dissolves. Remove from heat, add a generous handful (about 1 cup packed) of fresh basil leaves, cover, and steep for 20 minutes. Remove basil, cool, and store. Use 0.5 oz for one cocktail. (If using pre-made syrup, skip.)

Infuse and mix cocktail

  1. 4

Lightly toast 1/2 tsp whole Sichuan peppercorns in a dry skillet over medium heat for 30–60 seconds until aromatic. Let cool, then crush or grind finely (you can use a mortar and pestle or spice grinder). Measure 0.25 tsp ground Sichuan pepper for the drink and reserve any extra for the rim or future use.

  2. 5

In a cocktail shaker add: 2 oz Tequila Volcán blanco, 0.5 oz spicy chili liqueur (licor de chile), 0.5 oz triple sec Laranxa, 0.75 oz yuzu juice, 0.5 oz fresh lime juice, 0.5 oz basil syrup, and 0.25 tsp freshly ground Sichuan peppercorns.

  3. 6

Add 6 pieces of ice to the shaker. Seal and shake vigorously for 12–15 seconds until the shaker is very cold and well-chilled.

  4. 7

Double-strain the cocktail into the prepared glass (use a Hawthorne and fine strainer if available) to catch any Sichuan grit or basil bits.

Garnish and finish

  1. 8

Express the oils of a fresh basil leaf over the drink by lightly clapping the leaf between your hands then holding it over the cocktail and giving it a quick slap to release aromatics. Drop the basil leaf into the drink or rest it on the rim.

  2. 9

Float a thin lime wheel on the surface or rim the glass with it. Optionally, sprinkle a tiny pinch (a light dusting) of additional ground Sichuan pepper over the top for fragrance.

  3. 10

Serve immediately. The Margarita Szechuan balances bright citrus (yuzu + lime), herbal basil-syrup sweetness, orange liqueur, a warming chili liqueur note, and the numbing, floral-citrus tingle of Sichuan pepper.
