Directions for Fried Kalo
1. Prepare the Taro
Peel the taro and cut it into bite-sized cubes. Rinse the cubes under cold water to remove any excess starch.
2. Make the Garlic Chili Oil
In a small saucepan, heat 1/2 cup of vegetable oil over medium heat. Add minced garlic and chili flakes. Cook until the garlic turns golden brown, then remove from heat and set aside.
3. Fry the Taro
In a deep pot, heat the remaining vegetable oil over medium-high heat. Carefully add the taro cubes in batches, frying until they are golden brown and crispy, about 5-7 minutes.
4. Season and Serve
Remove the fried taro from the oil and place on paper towels to drain excess oil. Toss the hot taro in the garlic chili oil, and season with salt and black pepper. Serve immediately.
