    Cook the Chicken

    Season the chicken breasts with blackening spice and cook in a skillet over medium-high heat until cooked through and charred on the outside, about 6-7 minutes per side. Let them rest before slicing.

    In a large salad bowl, combine the romaine lettuce and mixed greens. Toss well to mix.

    Add the diced tomato, sliced avocado, and thinly sliced red onion to the greens. Gently toss to combine.

    Slice the blackened chicken and arrange it on top of the salad. Sprinkle the crumbled Cotija cheese and tortilla crisps over the top.
