Preparation of the Marinade

Make the Marinade

In a bowl, combine the soy sauce, mirin, sesame oil, minced garlic, and grated ginger. Mix well.

Cooking the Wagyu

Marinate the Wagyu

Place the Wagyu beef in a shallow dish and pour the marinade over it. Cover and let it marinate in the refrigerator for at least 30 minutes.

Sear the Wagyu

Heat a skillet over high heat. Remove the Wagyu from the marinade and sear it for 1-2 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes.

Preparing the Shiitake

Cook the Shiitake

In the same skillet, add the shiitake mushrooms and sauté them for about 5 minutes until tender. Add the miso paste and stir to coat the mushrooms.

Serving

Plate the Dish

Slice the rested Wagyu beef thinly and arrange it on a plate. Top with the sautéed shiitake mushrooms and serve with rice chips on the side.
