Mochi Preparation
Make the Mochi
In a mixing bowl, combine glutinous rice flour, sugar, and water. Stir until smooth. Transfer to a microwave-safe dish and cover with plastic wrap. Microwave on high for 2 minutes, stir, then microwave for another 1-2 minutes until sticky and slightly translucent. Dust a clean surface with cornstarch and transfer the mochi dough onto it. Allow to cool before cutting into pieces.
Crème Vanille Preparation
Prepare the Crème Vanille
In a saucepan, heat milk, heavy cream, and sugar over medium heat. Split the vanilla bean and scrape the seeds into the mixture. In a bowl, whisk together egg yolks and cornstarch. Once the milk mixture is hot (not boiling), slowly pour it into the egg yolk mixture while whisking. Return to the saucepan and cook over low heat, stirring constantly until it thickens. Strain through a sieve and cool.
Sauce Preparation
Make Chocolate Sauce
Chop dark chocolate and place in a bowl. Heat heavy cream and sugar in a saucepan until just boiling, then pour it over the chocolate. Let sit for a minute, then stir until smooth.
