Preparation of Veal

1

Sear the Veal

In a large pot, heat olive oil over medium-high heat. Season the veal shank with salt and pepper. Sear the veal on all sides until browned. Remove from pot and set aside.

2

Sauté Vegetables

In the same pot, add diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

3

Deglaze

Pour in the red wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce by half.

4

Braise the Veal

Return the veal to the pot, add beef stock, thyme, and bay leaves. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the veal is tender.

Cooking the Pasta

5

Cook the Gemelli

In a separate pot, bring salted water to a boil. Cook the gemelli pasta according to package instructions until al dente. Drain and set aside.

Finishing Touches

6

Prepare the Mushrooms and Foie Gras

In a skillet, melt butter over medium heat. Add sliced mushrooms and sauté until golden brown. Add diced foie gras and cook until just melted. Combine with the braised veal.

7

Combine and Serve

Toss the cooked gemelli with the veal and mushroom mixture. Adjust seasoning with salt and pepper if necessary. Serve hot.
