Dover Sole Ingredients

Method

Preparation Instructions

  1. 1

    Prepare the Sole

Season the Dover sole fillets with salt and black pepper on both sides.

  2. 2

    Cook the Sole

In a large skillet, heat the olive oil over medium heat. Add the seasoned fillets and cook for about 2-3 minutes on each side until the fish is golden and cooked through. Remove the fillets and keep warm.

  3. 3

    Make the Herb Beurre Blanc

In the same skillet, add the minced shallots and sauté until translucent. Pour in the white wine and reduce by half. Lower the heat and gradually whisk in the butter until melted and emulsified. Add the fresh herbs and lemon juice, stirring to combine.

  4. 4

    Serve

Debone the cooked sole tableside if desired, then plate the fillets and drizzle the herb beurre blanc over the top. Garnish with additional herbs if desired.
