Beef Tenderloin

Prepare the Beef
Preheat the oven to 400°F (200°C). Season the beef tenderloin generously with salt and cracked black pepper on all sides.

Sear the Beef
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the beef tenderloin and sear until browned on all sides, about 3-4 minutes per side.

Roast the Beef
Transfer the skillet to the preheated oven and roast the beef for about 20-25 minutes for medium-rare, or until it reaches the desired doneness. Remove from oven and let rest for 10 minutes before slicing.

Deglaze the Skillet
Carefully add the brandy or cognac to the skillet, scraping up any browned bits from the bottom. Allow it to cook for another 2-3 minutes until reduced by half.

Add Broth and Cream
Stir in the beef broth and bring to a simmer. Then, add the heavy cream and cook for 5 minutes, stirring occasionally until the sauce thickens. Add green peppercorns if using, and season with salt to taste.
