Preparing Madeleines

    Preheat the oven to 375°F (190°C). Melt the butter and let it cool slightly. In a bowl, whisk together sugar, eggs, and vanilla until frothy. Gradually add the melted butter while whisking.

    In another bowl, sift together flour, baking powder, salt, lemon zest, and cinnamon. Gradually fold the dry ingredients into the wet mixture until just combined.
