Cook the Bacon
In the same skillet, add the bacon slices and cook until crispy. Remove and drain on paper towels.

Make the Schmaltz Aioli
In a bowl, mix together mayonnaise, minced garlic, and schmaltz. Season with salt and pepper to taste.

Form and Cook the Patties
Divide the ground beef into four equal portions and form them into patties. Season both sides with salt and black pepper. Heat a grill or skillet over medium-high heat and cook the patties for about 3-4 minutes per side for medium-rare. In the last minute of cooking, place a slice of Comté cheese on each patty to melt.

Toast the Brioche Rolls
While the patties are cooking, slice the brioche rolls in half and toast them on the grill or in a toaster until golden brown.

Assemble the Burger
Spread the schmaltz aioli on the bottom half of the toasted brioche roll. Place the burger patty with melted cheese on top, followed by caramelized onions and crispy bacon. Top with the other half of the brioche roll and serve immediately.
