Preparation

    Prepare the Frites

    Peel the potatoes and cut them into thin strips. Rinse in cold water and pat dry with a towel.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

    Prepare the Steak

    Season the bavette steak generously with salt and black pepper on both sides.

    Cook the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steak and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest.

    Make the Maitre d'Butter

    In the same skillet, melt the unsalted butter. Add minced garlic and chopped parsley, cooking for 1-2 minutes until fragrant. Pour over the rested steak.

    Serve

    Slice the steak against the grain and serve alongside the frites, drizzled with the maitre d'butter.
