Prepare the Lentils
Rinse the lentils under cold water. In a pot, combine lentils with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until tender. Drain and set aside.

Cook the Salmon
Heat a non-stick pan over medium-high heat. Season the King Salmon fillets with salt and pepper. Add a little olive oil to the pan and place the fillets skin-side down. Cook for 4-5 minutes, then flip and cook for an additional 3-4 minutes or until desired doneness.

Prepare the Green Bearnaise
In a blender, combine 1 cup of fresh parsley, 1/4 cup of tarragon, 2 tablespoons of white wine vinegar, 2 egg yolks, and 1/2 cup of melted butter. Blend until smooth. Season with salt and pepper to taste.

Assemble the Dish
On each plate, place a bed of cooked lentils. Top with a salmon fillet, drizzle with green bearnaise, and garnish with salmon roe and frisée lettuce.
