    Prepare the Bordelaise Sauce

    In a saucepan, sauté chopped shallots in a bit of oil until translucent. Add red wine and reduce by half. Pour in beef broth and fresh thyme, simmer for 20 minutes until slightly thickened. Season with salt and pepper to taste.

    Cook the Bavette Steak

    Season the bavette steak with salt and pepper. Grill or pan-sear over medium-high heat for about 5-7 minutes per side for medium-rare. Let it rest for 5 minutes, then slice thinly against the grain.

    Make the Horseradish Cream

    Whisk together heavy cream and freshly grated horseradish. Season with salt to taste.

    Assemble the Sandwich

    Slice the baguette lengthwise. Layer the sliced bavette and raclette cheese inside the baguette. Place under a broiler until the cheese is melted and bubbly.
