Mousse Preparation

Melt the Dark Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a saucepan of simmering water, stirring gently until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Be careful not to overwhip.

Beat the Egg Whites
In another clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites, being cautious not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.
