Preparing the Yogurt and Granola

    Prepare the Granola

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine rolled oats, chopped nuts, honey or maple syrup, melted coconut oil, and cinnamon. Spread the mixture on a baking sheet and bake for 15-20 minutes, or until golden brown, stirring halfway through.

    Prepare the Yogurt

    In a bowl, mix Greek yogurt with honey and vanilla extract until smooth. Set aside.

Baking the Banana Bread

    Mix the Ingredients

    In a large bowl, combine mashed bananas, sugar, and melted butter. Add eggs and mix well. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture until just combined.

    Bake the Bread

    Pour the batter into a greased loaf pan and bake at 350°F (175°C) for 60-65 minutes or until a toothpick inserted in the center comes out clean. Let it cool before slicing.

Assembly

    Assemble the Yogurt Martini

    In a glass, layer the Greek yogurt mixture, followed by a layer of mixed berries and a sprinkle of granola. Repeat the layers until the glass is filled. Serve with slices of banana bread on the side.
