    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the russet potatoes under cold water, then dry them with a towel. Poke several holes in each potato with a fork.

    Bake the Potatoes

    Rub the potatoes with olive oil, salt, and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Scoop and Fill

    Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato on the skin. Place the skins on a baking sheet.

    Add Cheese and Bacon

    Fill each potato skin with aged cheddar cheese and chopped bacon.

    Final Bake

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, top with sliced green onions, and serve hot with sour cream on the side.
