Crêpe Preparation

    Make the Batter

    In a bowl, whisk together all-purpose flour, milk, eggs, melted butter, and salt until smooth. Let the batter rest for 30 minutes.

    Cook the Crêpes

    Heat a non-stick skillet over medium heat. Pour in about 1/4 cup of batter, swirling to coat the bottom of the skillet. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute. Repeat until all batter is used.

Filling Preparation

    Scramble the Eggs

    In a skillet, melt butter over medium heat. Whisk together eggs with salt and pepper, then pour into the skillet. Stir gently until scrambled and cooked to your liking.

    Assemble the Filling

    Chop the smoked salmon and green onions. Once the eggs are cooked, remove from heat and fold in the smoked salmon and green onions.

Hollandaise Sauce Preparation

    Make the Hollandaise

    In a saucepan, melt butter until bubbling. In a separate bowl, whisk egg yolks and lemon juice. Slowly whisk in the melted butter until the sauce thickens. Season with salt and cayenne pepper to taste.

Assembly

    Serve the Crêpes

    Place a crêpe on a plate, fill with scrambled egg mixture, and fold. Drizzle with hollandaise sauce before serving.
