Crêpe Preparation

    Make the Crêpe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter. Let the batter rest for at least 30 minutes.

    Cook the Crêpes

    Heat a non-stick skillet over medium heat. Pour about ¼ cup of batter into the pan, tilting to spread evenly. Cook for 2-3 minutes until the edges start to lift, then flip and cook for an additional 1-2 minutes. Repeat with remaining batter.

Filling Preparation

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add onion and bell pepper, cooking until softened. Add spinach and cook until wilted. Set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt. Pour into the skillet and scramble until just set. Combine with the sautéed vegetables.

Hollandaise Sauce Preparation

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks, lemon juice, and salt. Place over a pot of simmering water, whisking vigorously until thickened. Slowly drizzle in melted butter while continuing to whisk. Add cayenne pepper.

Assembly

    Assemble the Crêpes

    Place a warm crêpe on a plate, fill with the scrambled egg and vegetable mixture, sprinkle with cheddar cheese, and roll or fold. Drizzle with hollandaise sauce before serving.
