1. Cook the Pasta

In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

2. Sauté the Vegetables

5. Add Coconut Milk

Pour in the coconut milk, stirring to combine. Bring the mixture to a simmer and let it cook for an additional 5-7 minutes until thickened. Season with salt and black pepper to taste.

6. Combine with Pasta

Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the curry sauce. Cook for an additional minute to heat through.

7. Serve

Serve hot, garnished with fresh herbs if desired.
