Method

Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into evenly sized sticks about 1/4 inch thick.

    Soaking

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Drying

    Drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Frying

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels.

    Seasoning

    While the fries are still hot, sprinkle with salt and malt vinegar powder to taste.

Making Roasted Garlic Aioli

    Roasting the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 20-25 minutes until soft. Allow to cool.

    Blending

    In a blender or food processor, combine the roasted garlic, mayonnaise, lemon juice, olive oil, and salt. Blend until smooth and creamy.
