Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.
- 3
Sauté Garlic and Onions
Add minced garlic and chopped green onions to the skillet and sauté for about 1-2 minutes until fragrant.
- 4
Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper. Add a bit of reserved pasta water to thin it out if necessary.
- 5
Combine All Ingredients
Add the drained penne pasta to the skillet with the garlic and onions. Pour the egg and cheese mixture over the pasta and quickly toss to combine, adding reserved pasta water as needed to create a creamy sauce. Crumble the cooked bacon and mix it in.

Serve
Season with salt and additional black pepper to taste. Serve immediately with extra Parmesan cheese on top.
