Crust Preparation

    Make the Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 10 minutes, then remove from oven and let cool.

Lemon Curd Preparation

    Prepare the Lemon Curd

    In a saucepan, combine lemon juice, lemon zest, sugar, and eggs. Whisk together until smooth. Cook over medium heat, stirring constantly until thickened (about 10 minutes). Remove from heat and stir in the cubed butter until melted and smooth. Let cool to room temperature.

    Layer the Pie

    Once the crust and lemon curd have cooled, spread half of the lemon curd over the cooled crust. Then layer with French vanilla ice cream, smoothing it out evenly. Top with the remaining lemon curd. Cover and freeze for at least 4 hours or until firm.

    Slice the pie into wedges and serve chilled. Enjoy the refreshing contrast of lemon and cream!
