Mussels

Method

Mussels Preparation

  1. 1

    Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards if necessary.

  2. 2

    Cook the Mussels

In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced shallots, cooking until softened.

  3. 3

    Add Wine and Mussels

Pour in the white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and cook for about 5-7 minutes until the mussels open. Discard any that remain closed.

  4. 4

    Season and Serve

Stir in the chopped parsley, season with salt and pepper to taste, and serve immediately.

Fries Preparation

  1. 5

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin fries. Rinse the fries in cold water to remove excess starch, then pat dry.

  2. 6

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 7

    Fry the Potatoes

Carefully add the fries in batches to the hot oil, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

  4. 8

    Season and Serve

Sprinkle with salt while still hot. Serve alongside the mussels.
