Prepare the Patty

Season the Beef
In a bowl, combine the Angus ground beef with salt and black pepper. Mix gently to combine.

Form the Patties
Divide the beef mixture into two equal portions and form each into a patty. Make a slight indentation in the center of each patty.
Cook the Burger

Char-broil the Patty
Preheat a grill or grill pan over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they reach desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
Assemble the Burger

Prepare the Bun
Toast the brioche buns on the grill until golden brown.

Build the Burger
Spread Pommery mustard mayo (mix mustard and mayonnaise together) on the bottom bun. Layer with lettuce, tomato slices, and red onion. Place the char-broiled patty with melted cheddar on top, and finish with the top bun.
