    Prepare the Rice Pilaf

    In a saucepan, bring the vegetable broth to a boil. Add the rice, cover, and reduce heat to low. Cook for 15-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Cook the Vegetables

    In a skillet, sauté the mixed vegetables over medium heat until tender, about 5-7 minutes. Season with salt and pepper. Set aside.

Cooking the Haddock

    Prepare the Haddock

    Pat the haddock fillets dry with paper towels and season with salt and pepper. Dredge each fillet in flour, shaking off excess.

    Cook the Haddock

    In a large skillet, melt the butter over medium heat. Add the floured haddock fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through.

    Add Lemon

    Once the haddock is cooked, drizzle fresh lemon juice over the fillets and let it sizzle for a minute.

Serving

    Plate the Dish

    Serve the lemon butter haddock on a bed of rice pilaf with the sautéed légumes du jour on the side.
