Method

Cooking the Beef Tenderloin

    Prepare the Beef

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat.

    Sear the Beef

    Add the tenderloin to the skillet and sear for 3-4 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest.

Making the Red Wine Demi

    Cook Shallots

    In the same skillet, reduce heat to medium and add chopped shallots. Sauté until translucent.

    Add Wine and Stock

    Pour in red wine and beef stock. Bring to a boil, then reduce heat and simmer until reduced by half.

    Finish the Sauce

    Stir in butter and fresh thyme. Season with salt and pepper to taste.

Cooking the Vegetables

    Sauté the Vegetables

    Blanch or sauté the assorted seasonal vegetables in a separate pan until tender yet crisp.

Making Mashed Potatoes

    Boil the Potatoes

    In a pot, cover diced potatoes with water and boil until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain and mash the potatoes with butter, milk, salt, and pepper until smooth and creamy.
