Method

Preparing the Zucchini Sticks

    Step 1: Prepare Zucchini

    Preheat the oven to 425°F (220°C). Cut the zucchini into sticks, about 4 inches long and 1 inch wide.

    Step 2: Set Up Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

    Step 3: Bread the Zucchini

    Dip each zucchini stick in flour, then in beaten eggs, and finally coat with breadcrumbs. Place on a baking sheet lined with parchment paper.

    Drizzle or spray the zucchini sticks with olive oil and bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

Making the Dipping Sauces

    Step 1: Prepare Curry Mayonnaise

    In a bowl, mix together mayonnaise, curry powder, lime juice, salt, and garlic powder until well combined.

    Step 2: Prepare V-Thai Chili Sauce

    In a separate bowl, mix the Thai chili sauce with chopped fresh cilantro.

Serving
