Prepare the Rice

In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, or until rice is tender and water is absorbed. Fluff with a fork and set aside.

In a large bowl, combine 1 pound of ground beef with 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder. Mix gently and form into 4 equal-sized patties.

Preheat your grill or grill pan over medium-high heat. Lightly brush the grill grates with olive oil. Place the patties on the grill and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.

In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add diced bell pepper, zucchini, and red onion. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized.
