Fondue Ingredients

Method

Fondue Preparation

  1. 1

    Prepare the Potatoes

Scrub the new potatoes under cold water to remove any dirt. Boil them in salted water until fork-tender, approximately 15-20 minutes. Drain and set aside.

  2. 2

    Prepare the Cheese Mixture

In a fondue pot, rub the inside with the whole garlic clove. This will infuse the fondue with a subtle garlic flavor. Discard the garlic clove once done.

  3. 3

    Melt the Cheese

Add the white wine and lemon juice to the pot and heat over medium-low. Gradually add the grated gruyere and emmental cheese while stirring continuously until melted and smooth.

  4. 4

    Season the Fondue

Add nutmeg and black pepper to taste. Stir well to combine all ingredients.

  5. 5

    Serve

Transfer the melted cheese mixture to a fondue burner to keep warm. Serve with the boiled new potatoes, allowing guests to dip the potatoes into the cheese using fondue forks. Sprinkle chopped chives on top before serving.
