Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 5-10 minutes until frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead the Dough

    Mix until a dough starts to form, then transfer to a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

    Cook the Sausage and Beef

    In a skillet over medium heat, cook the Italian sausage and ground beef until browned and fully cooked. Drain excess fat and set aside.

    Mix the Filling

    In a large bowl, combine cooked sausage, beef, pepperoni, mozzarella cheese, Parmesan cheese, Italian seasoning, and garlic powder. Mix well.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape the Dough

    Once the dough has risen, punch it down and divide it into 2 equal portions for calzones or keep whole for a pizza. Roll out on a floured surface.

    Place a generous amount of filling on one half of the dough, leaving a border. Fold the dough over and seal the edges by pressing with your fingers or a fork.

    Prepare for Baking

    Transfer the calzones to a baking sheet dusted with cornmeal. Brush the tops with olive oil and cut a few slits for steam to escape.

    Bake in the preheated oven for 15-20 minutes or until golden brown.

    Remove from the oven, optionally sprinkle with red pepper flakes and fresh basil. Allow to cool slightly before serving.
