Mubarek Plate Recipe

Sliced gyro meat, seasoned chicken breast, beef kifta and kibbeh all over a bed of turmeric rice. Includes a side salad, pita bread and taziki sauce.

Method

Gyro Meat Preparation

    Prepare Gyro Meat

    In a mixing bowl, combine ground lamb, minced garlic, oregano, paprika, salt, and black pepper. Mix well until fully combined.

    Shape and Cook

    Shape the mixture into a loaf and place it on a baking sheet. Bake at 180°C (350°F) for about 45 minutes or until cooked through. Let it rest before slicing.

Chicken Breast Preparation

    Marinate Chicken

    In a bowl, combine chicken breast with olive oil, cumin, salt, black pepper, and garlic powder. Marinate for at least 30 minutes.

    Cook Chicken

    Heat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes per side or until fully cooked. Slice into strips.

Beef Kifta Preparation

    Prepare Kifta Mixture

    In a bowl, mix ground beef, chopped parsley, onion, cinnamon, salt, and black pepper. Blend until well combined.

    Shape and Grill

    Shape the mixture into long patties or skewers. Grill over medium heat for about 10-12 minutes, turning occasionally until cooked through.

Kibbeh Preparation

    Prepare Bulgur

    Soak bulgur wheat in water for 30 minutes, then drain well.

    Combine Ingredients

    In a bowl, combine soaked bulgur, ground beef or lamb, grated onion, toasted pine nuts, salt, and black pepper. Mix thoroughly.

    Shape and Cook

    Shape the mixture into oval dumplings or patties. Fry in hot oil until golden brown on all sides, approximately 5-7 minutes.

Turmeric Rice Preparation

    Cook Rice

    In a pot, combine basmati rice, turmeric, vegetable broth or water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and fluffy.

Side Salad Preparation

    In a bowl, combine diced cucumber, tomatoes, and sliced red onion. Drizzle with olive oil, lemon juice, and season with salt to taste. Toss to combine.

Tzatziki Sauce Preparation

    Mix Tzatziki Ingredients

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, and salt. Mix well and refrigerate until serving.

Serving

    Assemble the Plate

    On a large plate or platter, layer the turmeric rice as a base, then top with sliced gyro meat, marinated chicken strips, grilled beef kifta, and fried kibbeh. Serve with a side salad, pita bread, and tzatziki sauce.
