Kibbeh Preparation

1. Prepare the Bulgur

In a large bowl, soak the bulgur wheat in warm water for about 30 minutes until it softens. Drain and squeeze out excess water.

2. Make the Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the ground beef, salt, cinnamon, allspice, and black pepper. Cook until the beef is browned. Stir in the chopped walnuts and set aside to cool.

3. Prepare the Kibbeh Shell

In a large mixing bowl, combine the soaked bulgur, ground beef, and remaining onion. Mix well and knead with your hands until the mixture is smooth and pliable.

4. Shape the Kibbeh

Take a small handful of the kibbeh mixture and shape it into an oval or football shape, creating a hollow center. Fill with a spoonful of the beef and walnut mixture, then seal and reshape into an oval.

5. Fry the Kibbeh

In a deep skillet, heat the remaining olive oil over medium heat. Fry the prepared kibbeh until golden brown on all sides. Remove and drain on paper towels.

In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve the fried kibbeh on a platter alongside the tzatziki sauce, pita bread, and your choice of soup or salad.
