Prepare Vegetable Mix

Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped zucchini, yellow squash, red onion, green bell pepper, and red bell pepper. Season with salt and black pepper. Sauté for about 8-10 minutes or until the vegetables are tender and slightly caramelized, stirring occasionally.
Prepare Salad Base

Assemble Salad
In a large bowl, combine the mixed salad greens, halved cherry tomatoes, and diced cucumber. Toss gently to mix.
Fried Pita

Fry Pita
Cut the pita bread into triangles. In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the pita triangles and fry for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
Serve

Plate the Dish
On a serving plate, arrange the salad mix and top it with the sautéed vegetable mix. Serve the fried pita on the side for dipping.
