Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Pour in the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Sauté Spinach

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Spinach

    Add chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    Combine Filling Ingredients

    In a bowl, combine the sautéed spinach, mozzarella cheese, feta cheese, and black pepper. Mix well.

Assembling the Calzone/Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside.

    Shape the Dough

    Once the dough has risen, punch it down and divide it into two equal portions for calzones or leave it whole for a pizza. Roll out the dough on a floured surface to your desired thickness.

    Fill the Dough

    For calzones, place half of the filling mixture on one side of the rolled-out dough, leaving a border. Fold the dough over and seal the edges. For pizza, spread the filling evenly over the dough.

    Add Toppings (if desired)

    If making a pizza, sprinkle extra mozzarella cheese and dried oregano on top. Brush calzones with olive oil.

    Transfer the calzone or pizza onto the preheated stone or baking sheet. Bake for 12-15 minutes or until golden brown.
