Pasta Preparation

    Cook the linguini

    Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside.

Vegetable Sauté

    Sauté the vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for an additional 2-3 minutes until the mushrooms are tender.

    Add artichokes and spinach

    Stir in the artichoke hearts and fresh spinach. Cook until the spinach wilts, about 2 minutes.

Sauce Preparation

    Make the sauce

    Add the crushed tomatoes, heavy cream, chopped rosemary, salt, and black pepper to the vegetable mixture. Stir well to combine and let it simmer for about 5-7 minutes until slightly thickened.

Combine and Serve

    Combine pasta and sauce

    Add the cooked linguini to the skillet and toss to coat thoroughly with the sauce. Cook for an additional 2 minutes to heat through.

    Serve

    Serve the rosemary pasta warm, topped with grated Parmesan cheese.
