Gyro Meat Preparation

Marinate the Meat
In a mixing bowl, combine olive oil, garlic powder, onion powder, cumin, salt, black pepper, oregano, and lemon juice. Mix well to form a marinade.

Coat and Rest
Coat the pork shoulder or lamb with the marinade, ensuring it's well covered. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably overnight.

Cook the Meat
Preheat the oven to 375°F (190°C). Place the marinated meat on a baking sheet and roast for about 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C). Allow it to rest for 10 minutes before slicing.

Marinate the Onions
In a separate bowl, mix red wine vinegar, water, and salt. Pour this mixture over the sliced onions, ensuring they are submerged. Let them marinate for at least 30 minutes.
Tzatziki Sauce Preparation

Combine Ingredients
In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt.

Mix and Chill
Stir until well combined. Refrigerate for at least 30 minutes to allow flavors to meld.
Assemble the Gyro Sandwich

Warm the Pita
Gently warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side, or until soft.

Layer the Ingredients
On each warm pita, layer sliced gyro meat, marinated onions, shredded lettuce, sliced tomatoes, and a generous dollop of tzatziki sauce. Top with crumbled feta cheese.

Fold the pita in half to create a sandwich and serve immediately.
