Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl and cover with a damp cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Cook Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Add Tomato and Seasoning

    Add diced tomato, chopped parsley, salt, and black pepper to the skillet. Cook for an additional 3-4 minutes until the tomatoes soften. Remove from heat and let cool slightly.

Assemble Calzone

    Prepare Filling

    In a mixing bowl, combine the sautéed vegetable mixture with shredded mozzarella and crumbled feta cheese. Mix until evenly combined.

    Shape Calzones

    Preheat the oven to 475°F (245°C). Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter.

    Fill Calzones

    Place a generous amount of filling on one half of each dough circle. Fold the other half over and press the edges to seal. Use a fork to crimp the edges.

    Bake Calzones

    Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
