Method

Falafel Preparation

  1. 1

    Soak Chickpeas

Soak the dried chickpeas in water for at least 8 hours or overnight.

  2. 2

    Drain Chickpeas

Drain the soaked chickpeas and rinse them under cold water.

  3. 3

    Blend Ingredients

In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together when pressed.

  4. 4

    Form Falafel

Form the mixture into small balls or patties, about 1.5 inches in diameter.

  5. 5

    Fry Falafel

In a deep pan, heat the oil over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Tzatziki Sauce Preparation

  1. 6

    Prepare Cucumber

Grate the cucumber and squeeze out excess moisture using a clean kitchen towel.

  2. 7

    Mix Tzatziki

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Mix well.

Sandwich Assembly

  1. 8

    Warm Pita

Warm the pita bread in a dry skillet or microwave for a few seconds until pliable.

  2. 9

    Prepare Tomato

Slice the tomato and set aside.

  3. 10

    Assemble Sandwich

Open the pita bread and stuff with lettuce, falafel, sliced tomato, and a generous drizzle of tzatziki sauce.
