Preparation of Filling

    Cook the Rice

    In a medium saucepan, combine the long-grain rice and 1 cup of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let cool.

    Mix the Filling

    In a large bowl, combine the cooked rice, chopped parsley, dill, finely chopped onion, olive oil, salt, black pepper, and lemon juice. Mix well until all ingredients are incorporated.

Assembling Dolmas

    Prepare Grape Leaves

    Rinse the canned grape leaves under cold water to remove excess brine. Carefully separate the leaves and place them on a clean surface, vein side up.

    Stuff the Grape Leaves

    Take a grape leaf and place about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll it up tightly from the base to the tip. Repeat with the remaining leaves and filling.

Cooking Dolmas

    Prepare Cooking Liquid

    In a large pot, combine the vegetable broth, olive oil, and lemon juice. Place the stuffed dolmas seam side down in the pot, packing them tightly together.

    Cook the Dolmas

    Bring the cooking liquid to a gentle simmer over medium heat. Cover the pot and let the dolmas cook for about 40 minutes, adding more broth or water if needed to keep them moist.

Serving

    Serve the Dolmas

    Once cooked, remove the dolmas from the pot and let them cool slightly before serving. They can be served warm or at room temperature, drizzled with additional olive oil and lemon juice if desired.
