Marinade Preparation

Prepare the Marinade
In a large mixing bowl, combine plain yogurt, olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well until all ingredients are fully incorporated.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).

Grill the Chicken
Remove the marinated chicken from the refrigerator and let it come to room temperature for about 15 minutes. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.

Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then slice the chicken into thin strips.

Warm the pita bread on the grill for about 1 minute on each side. Place a generous amount of sliced chicken in each pita, followed by fresh vegetables and a drizzle of tahini sauce or garlic sauce.
