Roast the Eggplant
Preheat your oven to 400°F (200°C). Slice the eggplant in half lengthwise and place it cut side down on a lined baking sheet. Roast for about 35-40 minutes, or until the skin is wrinkled and the flesh is tender.

Cool and Scoop
Once roasted, remove the eggplant from the oven and let it cool for about 10 minutes. Scoop out the flesh with a spoon and discard the skin.

Blend the Ingredients
In a food processor, combine the roasted eggplant flesh, tahini, garlic cloves, lemon juice, olive oil, salt, ground cumin, and paprika. Blend until you achieve a smooth and creamy consistency.

Taste and Adjust
Taste the Baba Ghanouj and adjust seasoning as needed, adding more salt or lemon juice to suit your preference.

Garnish and Serve
Transfer the Baba Ghanouj to a serving bowl, drizzle with a little olive oil, and sprinkle with chopped fresh parsley. Serve with warm pita bread.
