Pancake Preparation

Make the Pancake Batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the buttermilk, eggs, melted butter, vanilla extract, lemon zest, and lemon juice. Combine the wet and dry ingredients gently until just mixed; the batter should be slightly lumpy.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.
Guava Coulis Preparation

Prepare the Coulis
In a small saucepan, combine the guava puree, sugar, and lemon juice. Heat over medium heat, stirring until the sugar dissolves. Allow to simmer for about 5-7 minutes until slightly thickened. Remove from heat and let cool.
Ube Coconut Sabayon Preparation

Make the Sabayon
In a heatproof bowl, whisk together the egg yolks and sugar. Add coconut milk and water. Place the bowl over a pot of simmering water, whisking constantly until the mixture thickens and forms a light sabayon, about 10 minutes. Remove from heat and stir in the ube extract.
Assembly

Serve the Pancakes
Stack the pancakes on a plate, drizzle with guava coulis, and top with a spoonful of ube coconut sabayon. Enjoy!
