    Prepare the Filling

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the diced bell pepper and sauté until tender, about 3-4 minutes. Stir in the pipikaula and kalua pork, and cook for an additional 2-3 minutes until heated through. Remove from heat and set aside.

    Make the Egg Mixture

    In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    Cook the Omelet

    In a non-stick skillet, melt the remaining tablespoon of butter over medium heat. Pour in half of the egg mixture, tilting the pan to spread it evenly. Cook until the edges begin to set, about 2-3 minutes.

    Add Filling and Cheese

    Once the edges are set, add half of the filling mixture and half of the pepper jack cheese on one half of the omelet. Fold the other half over the filling.

    Finish Cooking

    Cook for another 2-3 minutes until the cheese is melted and the omelet is cooked through. Slide it onto a plate and repeat the process for the second omelet with the remaining ingredients.
