Marinating the Chicken

In a large bowl, combine the buttermilk, garlic powder, paprika, salt, and black pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
Preparing the Breading

In a separate bowl, mix together the flour, cornstarch, salt, black pepper, and cayenne pepper.
Frying the Chicken

Heat the vegetable oil in a large, deep skillet or fryer over medium-high heat until it reaches 350°F (175°C).

Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off the excess.

Carefully place the breaded chicken pieces in the hot oil. Fry in batches, making sure not to overcrowd the pan, for about 12-15 minutes or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

Transfer the fried chicken to a wire rack to drain excess oil.

In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and cook for 1-2 minutes until fragrant, then stir in the chopped parsley, lemon juice, and lemon zest. Cook for another minute and remove from heat.
